El motivo del art\u00edculo fue su reciente victoria como Best Chef en los&nbsp;<strong><a href=\"https:\/\/whatsuprincon.com\/es\/the-best-of-the-west-readers-choice-2025-winners\/readers-choice-2025-food-and-drink-winners\/\" target=\"_blank\" rel=\"noreferrer noopener\"><em>Readers\u2019 Choice Awards de What\u2019s Up Rinc\u00f3n<\/em><\/a><\/strong>, un reconocimiento otorgado por la misma comunidad que conoce y aprecia su cocina.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-1f321ef2714b8738a36d7e56955d6fc5\" style=\"text-transform:none;line-height:1.65\">Poco antes de nuestra cita, Joerick recibi\u00f3 una noticia tan inesperada como emocionante: hab\u00eda sido nombrado semifinalista a\u00a0<strong>Best Chef: South<\/strong>\u00a0por la\u00a0<a href=\"https:\/\/www.jamesbeard.org\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Fundaci\u00f3n James Beard<\/strong><\/a>. Para quienes no est\u00e1n familiarizados, estos premios son como \u201clos \u00d3scar\u201d del mundo culinario. B\u00e1sicamente, el sue\u00f1o de todo chef. El primero en compartirle la noticia fue el tambi\u00e9n nominado y reconocido chef puertorrique\u00f1o\u00a0<a href=\"https:\/\/chefraulcorrea.com\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Ra\u00fal Correa.<\/strong><\/a>\u00a0Llam\u00f3 mientras Joerick y su esposa, Ver\u00f3nica, regresaban manejando a Rinc\u00f3n. Si conoces a Joerick, sabes que el silencio no es lo suyo, pero describe el resto del trayecto como completamente callado. Todav\u00eda est\u00e1 procesando la noticia, pero la nominaci\u00f3n parece haberlo aterrizado a\u00fan m\u00e1s y, curiosamente, hacerlo todav\u00eda m\u00e1s humilde.<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" style=\"text-transform:none\"><strong>Pa\u2019l Monte: Sabores puertorrique\u00f1os, reinterpretados<\/strong><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-4ce534c1c11700ac0fe4652441ce446f\" style=\"text-transform:none;line-height:1.65\">Hace diez a\u00f1os, Joerick abri\u00f3&nbsp;<strong>Pa\u2019l Monte<\/strong>&nbsp;con un objetivo claro: demostrar que la cocina puertorrique\u00f1a pod\u00eda ser creativa, reflexiva y sorprendente. En el men\u00fa no hay arroz con habichuelas, no porque no le gusten, sino porque busca retar las ideas limitadas de lo que puede ser la comida local.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-6e2d3fa6541648c3c73a62d83eeab825\" style=\"text-transform:none;line-height:1.65\">Los platos est\u00e1n anclados en sabores familiares, inspirados en parte por su madre, una chef repostera retirada. La ejecuci\u00f3n, sin embargo, es moderna y creativa. Con el tiempo, Pa\u2019l Monte se ha convertido en un punto fijo en Rinc\u00f3n, un espacio c\u00e1lido y acogedor al que la gente del pueblo vuelve una y otra vez.<\/p>\n\n\n\n<div style=\"height:10px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" style=\"text-transform:none\"><strong>Bakku: Un regreso a las ra\u00edces japonesas<\/strong><\/h3>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-0cd4eb296c443f04787e61bb710c8ab0\" style=\"text-transform:none;line-height:1.65\">Luego del hurac\u00e1n Mar\u00eda, tanto su hogar como Pa\u2019l Monte sufrieron da\u00f1os severos. Joerick regres\u00f3 a los Estados Unidos continentales para trabajar. Se qued\u00f3 m\u00e1s tiempo de lo previsto, colaborando con reconocidos chefs japoneses y perfeccionando su t\u00e9cnica.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-9d225bcf0faf5e64a4338210b5944ea6\" style=\"text-transform:none;line-height:1.65\">De esa experiencia nace&nbsp;<strong>Bakku<\/strong>. La palabra significa regresar o retorno en japon\u00e9s, y para \u00e9l tiene un doble significado. Por un lado, marca su regreso a la cocina japonesa luego de una pausa para abrir un restaurante de comida puertorrique\u00f1a como Pa\u2019l Monte. Antes, Joerick hab\u00eda manejado un espacio de sushi con un giro m\u00e1s caribe\u00f1o, y Bakku tambi\u00e9n representa un compromiso renovado con los m\u00e9todos tradicionales japoneses, alej\u00e1ndose del sushi caribe\u00f1o que hab\u00eda explorado en el pasado.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-a0eb066f03f94ee05b6eac1e83183b48\" style=\"text-transform:none;line-height:1.65\">En Bakku, la precisi\u00f3n japonesa se encuentra con la riqueza marina del Caribe. M\u00e1s del 60 por ciento de los mariscos provienen de aguas locales, muchas veces las mismas especies que se encuentran en Jap\u00f3n, pero con nombres puertorrique\u00f1os. Dentro de la cocina, exige excelencia en cada plato, en cada servicio y en cada detalle.
