He&#8217;s at a competition in Mayag\u00fcez, <em>Festival Gastron\u00f3mico Porta del Sol 2025<\/em>, and he&#8217;s just finished plating a dish he&#8217;s incredibly proud of. Standing there, looking at what he&#8217;s made, something clicks.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">&#8220;That plate isn&#8217;t really mine,&#8221; he tells us. &#8220;It belongs to the farmers who grew what&#8217;s on it.&#8221;<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">That single thought pretty much tells you everything you need to know about who this guy is.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"text-transform:none\">From the Campo to the Kitchen<\/h2>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">Jes\u00fas grew up immersed in the kind of life a lot of us romanticize but rarely actually live: agriculture, handcraft, food cooked the way it was always cooked, no shortcuts. He grew up in Aguada, in western Puerto Rico, surrounded by real flavors and hands-on cooking processes. The land wasn&#8217;t backdrop. It was the point.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">He didn&#8217;t go straight into cooking. He tried other paths first, like many of us do when we\u2019re young and still figuring things out. But the kitchen kept pulling him back. By his early twenties, in the middle of some personal hard times, he found in cooking something he wasn&#8217;t expecting: a language. A way to say things that were hard to say out loud.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">That&#8217;s when it stopped being just cooking.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-946d0b9e42784b9103ddd596ea6c033f wp-block-paragraph\" style=\"text-transform:none;line-height:1.65\">Today, he owns and runs <strong><a href=\"https:\/\/www.facebook.com\/carnemiarest\" target=\"_blank\" rel=\"noreferrer noopener\">Carne M\u00eda Restaurant<\/a> <\/strong>in Aguada, along with his family. It\u2019s a spot that takes the flavors most of us grew up eating and treats them with the kind of care and technique you&#8217;d expect from somewhere much more formal. It&#8217;s Puerto Rican food elevated, but not in the way that makes you feel like something got lost in translation. The soul is still there.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"text-transform:none\">Building Something on His Own Terms<\/h2>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">Ask Jes\u00fas how <em>Cena entre Amigos<\/em> got started and he&#8217;ll tell you: he just opened his doors and started doing it. No one handed him a blueprint. He&#8217;d been watching what other chefs were doing, noticing what was missing from the scene out west, and decided not to wait around for someone else to fill the gap.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">The first dinners were simple. His early collaborator was just one mixologist. They were already working with local ingredients, things Jes\u00fas sourced himself, but it was still early. Still taking shape.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">From there, the project grew organically. He started telling his story. People started showing up. By the third and fourth dinners, he was bringing in more collaborators, showing footage from past events, building momentum. Now there are guests who keep coming back, people who&#8217;ve attended multiple editions in a row. It is no longer just a series of events, but a growing community.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">The concept has evolved into something that&#8217;s genuinely hard to put in a single category. It&#8217;s a dinner series, yes. But it&#8217;s also a kind of ongoing conversation about what western Puerto Rico actually has to offer, which, Jes\u00fas will be quick to tell you, is a lot more than people realize.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">According to Feliciano, everything can be found here, but people just don&#8217;t see it yet.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">So he&#8217;s making them see it. By bringing the farmers to the table. Literally. By inviting the fishermen in and letting them speak, not just as suppliers, but as storytellers. At one recent dinner, a fisherman from Cabo Rojo came in with fresh catch and spent time talking to guests. Not just about the fish. About his family. His life. His dog. The room felt engaged in a way no tasting menu alone could achieve.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">&#8220;Everything has a story,&#8221; Jes\u00fas says. &#8220;And that&#8217;s what stays with you.&#8221;<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">He keeps the dinners intentionally intimate, around 25 to 30 guests max. Because the intimacy isn&#8217;t a limitation, but the whole point.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"text-transform:none\">Recognition, But Make It Meaningful<\/h2>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">Jes\u00fas earned second place at the Porta del Sol 2025 competition. The Puerto Rico Capitol has also formally recognized his work for his contributions to culinary culture, local farming, and economic development in the region.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">He doesn&#8217;t dismiss those things. But he&#8217;s also clear about what actually matters to him.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">At the competition, placing second wasn&#8217;t the takeaway. The takeaway was what he felt standing over that plate, realizing the credit belonged to the people who grew the ingredients. That&#8217;s the story he wanted to tell. And the respect he received from the community around him, the farmers, the fellow chefs, the locals, meant more than any ranking.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">His kitchen, he&#8217;ll tell you, is collective. The dishes that come out of it are the product of a whole network of people. That&#8217;s not false modesty. His food is the anchor of the whole experience, the thread that connects every collaborator at the table back to the west, to the land, to the story he&#8217;s been telling since the beginning.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-cc85d61fe971a5787c109a7356c7dc94 wp-block-paragraph\" style=\"text-transform:none;line-height:1.65\"><strong><a href=\"https:\/\/www.instagram.com\/lorainearroyo\/\" target=\"_blank\" rel=\"noreferrer noopener\">Chef Loraine Arroyo<\/a><\/strong> is the founder of <strong>Passiflora Vegan PR<\/strong> and recently opened <strong>Ylang Ylang<\/strong>, a restaurant collaboration with <strong>El Oasis Hotel<\/strong> centered on creative Caribbean cuisine. She&#8217;s also behind <em>Ra\u00edces Coste\u00f1as<\/em>, a project dedicated to recovering forgotten coastal recipes in partnership with local fishing families. Her approach centers around food sovereignty, seasonal harvests, and sustainable fishing, therefore aligning closely with what Cenas entre Amigos aims to do.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\"><strong>Chef Edwin Iv\u00e1n<\/strong>, born in A\u00f1asco, has been cooking professionally since 2003 and has traveled to over 34 countries absorbing techniques and cultures that now inform everything he puts on a plate. He&#8217;s the kind of chef who&#8217;s earned his curiosity. Every dish he makes carries real lived experience.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-72b6351ddf2d04b35d41ae9c2d704c38 wp-block-paragraph\" style=\"text-transform:none;line-height:1.65\">Pastry Chef<strong> <a href=\"https:\/\/www.facebook.com\/neftaliic\/\" target=\"_blank\" rel=\"noreferrer noopener\">Neftali Carrero<\/a><\/strong> grew up in Mayag\u00fcez, got his formal training at the Escuela Hotelera de San Juan&#8217;s Mayag\u00fcez campus, refined his craft at the <strong>Condado Vanderbilt<\/strong> and came back west to build his own thing with <strong>Tal\u00ed Le Patissie<\/strong>r. He&#8217;s currently also the pastry chef at <strong>Messalina <\/strong>in Aguadilla and a partner at <strong>Casa Abu<\/strong> in Mayag\u00fcez. His origin story, drawn to baking by the smell of his madrina&#8217;s kitchen, fits the spirit of this whole project perfectly.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color has-custom-lineheight wp-elements-bc239f413d78a5d5a3b05e8088ca4847 wp-block-paragraph\" style=\"text-transform:none;line-height:1.65\">On the cocktail side: <a href=\"https:\/\/www.instagram.com\/alexis_tc2\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Alexis Figueroa<\/strong><\/a>, an Aguada native who&#8217;s been in the bartending world since 2018 and is part of the <strong>Bar Clandestino<\/strong> agency. And returning to the table: <a href=\"https:\/\/www.instagram.com\/d_p3r3z\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>David P\u00e9rez<\/strong><\/a>, the mixologist who was there from the very beginning.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">Two bar styles. Two interpretations of gin. He describes it as intimate, almost like a farm retreat, connected to land his family has held for generations, going back to his grandfather. There&#8217;s history embedded in it before a single dish is served.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">What he keeps coming back to, underneath all of it, is something simple: Puerto Rico has access to an extraordinary range of ingredients, almost like multiple countries&#8217; worth of produce and seafood in one place, and not enough people know it or value it the way they should. His entire project, from the restaurant to the dinners to Haba, is about changing that.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">Not by chasing trends. Not by leaving the island for validation. But by setting a table in Aguada, inviting the farmer in to tell his story, and letting the food do the rest.<\/p>\n\n\n\n<p style=\"text-transform:none;line-height:1.65\" class=\"has-custom-lineheight wp-block-paragraph\">One last thing, because this is a family restaurant, and families don&#8217;t let you leave hungry. Before we wrapped up, Jes\u00fas&#8217;s mom appeared with soup and then came a plate of Carne M\u00eda&#8217;s montaditos that, honestly, we&#8217;re still thinking about. Fluffy but crisp, tender meat, cabbage, pickled onion, and crispy recao on top. Simple, balanced, and completely perfect.
