Codfish Gazpacho
Serves 6
Ingredients:
8 oz Codfish (cooked and desalted)
1/2 Onion
1 Ripe Avocado
1 Tomato
1/4 teaspoon Fresh Cilantro
2 Tablespoons Olive Oil
Procedure:
- Cut the onion and tomato into small cubes.
- In a large pot, add the onion and tomato, add olive oil, and mix.
- Chop fresh cilantro and add it to the mixture.
- Add the codfish and mix well.
- Cut avocado into cubes and add it to the mixture.
- Serve with breadfruit tostones.
