New Kids on the Block: La Monstera Takes Root in Rincón’s Culinary Scene

A new chapter in Rincón’s vibrant dining scene has begun with the opening of La Monstera. The restaurant blends bistro classics with bold Puerto Rican flavors. Founded by chef Alayna Clarke, a native of NY, the restaurant is a reflection of her lifelong connection to Puerto Rico and passion for culinary excellence.  

Clarke’s journey with the island began at age 11, visiting her “abuela” in Camuy, where she formed lasting memories of horseback riding and connecting with Puerto Rico’s rich natural beauty. “It is the beauty of that same flora and fauna which I cherish so much about the West of Puerto Rico” she says. After graduating from The Culinary Institute of America, she eventually made Rincón her permanent home, where she has lived for seven years.

La Monstera opened its doors on February 10, 2025, and is quickly becoming a must-visit destination for both locals and visitors. From cocktails to elegant dinners, guests can expect a warm, inviting atmosphere that feels both familiar and exciting.  

The restaurant offers a fresh take on Puerto Rican cuisine with a rotating menu that blends technique and tradition with the island’s freshest ingredients. Dishes from their first week’s menu included Wahoo crudo, Mushroom and truffle risotto, Braised pork belly with pickled papaya, and a Tam salad with walnuts and ginger dressing. 

A Team of Culinary Experts

Behind every great restaurant is a strong team. Clarke has assembled a group of talented professionals who share her passion for hospitality.  “None of this would be possible without the help of a special few,” says Clarke.

Sous Chef Robert Flynn is the executive chef’s trusted second-in-command. Originally from San Juan, he trained at Johnson & Wales University. He has built a strong reputation, refining his skills in top kitchens from New Orleans to San Juan. With his keen eye and meticulous attention to detail, he ensures that every dish leaving the kitchen is consistently delicious.

The front-of-house staff is equally impressive. Featured are local talents Carlos Wensel and Francis Guzmán, along with the hospitality expertise of Natalie Rafetto from California. This skilled team instinctively prioritizes making every guest feel like family the moment they step through the doors. “The best way to describe La Monstera,” the team says, “is Grandma’s home cooking meets Michelin-style preparation.”  

Craft Cocktails with a Global Touch

Heading the bar and beverage program is San Juan native, Macarena Rotger. Rotger moved to Rincón in 2021 after six years in Asia. Having worked in diverse cultures around the globe, Macarena brings a wealth of experience. Her background includes roles as a beverage director, bar manager, educator, brand consultant, event manager, and hospitality consultant. She crafted the cocktail menu and expertly trained the team while overseeing all front-of-house operations. “Guests can expect a fun, interactive experience with crafted cocktails that complement the flavors and inspiration behind Chef Alayna’s creations,” Rotger explains. “The drinks are inspired by modern classics with a French influence, using ingredients sourced from local businesses.”  

A Labor of Love  

Transforming La Monstera from a boutique space into a sophisticated restaurant was a true team effort. Clarke acknowledges the contributions of Anthony Perez, Danny Clark, and Ariel for their vital roles in the restaurant’s pre-construction phase.  

“Thank you to all who have come in support, and welcome to those of you who have yet to come,” says Chef Alayna.

La Monstera welcomes diners Thursday through Tuesday from 5:30 PM to 10:00 PM for food service. The bar stays open late for those enjoying the lively La Monstera nightlife experience.
