La Tribu BBQ: Where the Smoke Tells Stories and the Flavor Brings Us Together

From Food Truck to a Rincón Flavor Icon

La Tribu BBQ began as a food truck that spent five months winning over palates in the FAMCOOP food truck area. The project is led by Edgar Brown Caro and his partner, Denise Rivera, who now welcome guests into their new spot in the heart of Rincón (in the former Aquaviva location).

Edgar was born in Río Piedras and has roots in Rincón through his mother. He learned to cook at a young age with his grandfather, Tony Caro. Denise, from Caguas, is his creative partner, supporting every bold idea that comes out of this smoky, flavor-packed kitchen.

Together, they’ve built a “tribe” where BBQ becomes tradition, community, and passion.

Smoked the Boricua Way

La Tribu BBQ cooks everything in a reverse-flow smoker using Puerto Rican woods that include almond and guava. This technique creates deep, authentic layers of flavor.

If you’re new to smoked BBQ, you’ll notice a pink ring in the meat. That’s not undercooked! it’s the natural result of slow smoking, which keeps the meat tender, juicy, and full of character.
