After closing Trigo’s original shop in Rincón, the team has opened this new space at Centro La Paz. Meanwhile, the space is dedicated entirely to shio pan, a traditional Japanese bread. It is loved for its simplicity: soft and fluffy inside, crisp on the outside, and rich with buttery flavor that quickly becomes addictive.
From Trigo to Shiopan Bakehouse
The team behind Trigo decided to take a bold step: opening Puerto Rico’s first bakery focused exclusively on shio pan. What started as a classic Japanese recipe has been reimagined into a creative, small-batch, artisanal concept where freshness and quality always come first.
The response was immediate. On opening weekend in Rincón, all 11 flavors sold out before noon, proving that this unique bakery is here to stay.

How to Get Them: Formats and Baking Schedule

Everything at Shiopan Bakehouse revolves around shio pan:
- Sold individually, in 3-packs, or 6-packs.
- Mix and match flavors for your own box.
- Baked fresh on Saturdays and Sundays, 9:00 a.m. to 1:00 p.m. (or until sold out).
Tip: arrive early! Production is limited and the bread usually sells out quickly.
Beyond Bread: Coffee, Drinks & a Japanese Mini Market
The bakery experience goes further than shio pan. You’ll find hot and cold coffee as well as specialty Japanese-inspired drinks like jasmine horchata and matcha with Calpis, the popular fermented yogurt beverage from Asia.
Adding to the experience, Shiopan Bakehouse also includes a Japanese mini market, stocked with candies, chips, and packaged snacks straight from Japan.
