No reservations? No problem. Some of the most memorable Mother’s Day moments happen when you slow down and make something meaningful. Here are a few ideas perfectly suited to life on the west coast, plus recipes to make each one a little extra special.
Beach Picnic
Pack a basket, grab a blanket, and head to one of our local beaches. A beach picnic is effortless and beautiful and gives mom the gift of doing absolutely nothing.
Caprese Skewers with Mango
Simple, fresh, and perfect for the beach. Thread cherry tomatoes, fresh mozzarella, basil leaves, and cubed ripe mango onto skewers. Drizzle with olive oil and balsamic glaze, finish with flaky salt and black pepper. Pack them in a container and they’re ready to go; no utensils needed.
Watermelon Agua Fresca
Blend 4 cups of cubed seedless watermelon until smooth and strain into a pitcher. Stir in the juice of 2 limes, a tablespoon of honey or agave, and 2 cups of cold water. Pour over ice and garnish with fresh mint. Refreshing, hydrating, and naturally sweet.
Hike to a Viewpoint
The west coast has gorgeous trails with stunning views. A morning hike with mom is a chance to talk, breathe, and just be together.
Banana Oat Energy Bites
Make these the night before and pack them in a zip bag. Mash 2 ripe bananas and mix with 1½ cups rolled oats, 3 tablespoons of peanut or almond butter, 2 tablespoons of honey, and a quarter cup of mini chocolate chips or shredded coconut. Roll into balls and refrigerate for at least 30 minutes. Makes about 16 bites. Easy to eat on the trail and genuinely satisfying.
Mango Coconut Post-Hike Smoothie
Blend 1 cup of frozen mango, half a banana, half a cup of coconut milk, the juice of one lime, and a pinch of sea salt until smooth. Tropical, creamy, and cooling after a morning of movement.
Make Her Brunch at Home
There’s extra special about waking up early and making breakfast for someone you love. Let her sleep in. Set the table nicely, maybe add a flower, and present her with a real homemade brunch.
Coconut French Toast with Caramelized Pineapple
Whisk together 2 eggs, half a cup of coconut milk, a teaspoon of vanilla extract, and a teaspoon of cinnamon. Dip thick slices of brioche or pan sobao into the mixture and cook in butter over medium heat until golden on both sides. For the pineapple, melt 2 tablespoons of butter and 2 tablespoons of brown sugar in a pan, add a cup of fresh sliced pineapple, and cook 3 to 4 minutes until caramelized. Serve on top of the French toast with a dusting of powdered sugar.
Tropical Fruit Salad with Honey-Lime Dressing
Combine whatever fruits you like: mango, papaya, pineapple, strawberries, kiwi. Whisk together the juice of 2 limes with a tablespoon of honey and a handful of chopped fresh mint, then toss with the fruit. It’s light, colorful, and the perfect complement to a richer main dish.
Café con Leche, Done Right
Don’t underestimate the power of a perfect cup of coffee. Brew strong Puerto Rican coffee and heat whole milk on the stove until steamy but not boiling. Combine in equal parts, sweeten to taste, and serve in a wide ceramic mug. Simple, and exactly right.
